SCHNITZEL &STORIES
Zusammen mit meiner Kollegin und Freundin Arlene Stein produziere ich seit 2024 den Food Podcast Schnitzel & Stories
FOOD is never just food
Schnitzel & Stories is a podcast about food, culture, and the people shaping the systems behind what we eat. Hosted by Arlene Stein and Angelika Schwaff, it brings together chefs, restaurateurs, writers, historians, journalists, and scientists to tell the stories you won’t find on the menu: the hidden histories, the politics, and the power struggles that end up on our plates.
Over four seasons, we’ve asked the questions behind the dish. Is schnitzel really Austrian? We asked an Austrian chef who doesn’t even like it, and the Ukrainian chef who got borscht onto UNESCO’s World Heritage list. We followed the way migration changes what we eat, from the Great Migration in the US to the Döner in Berlin. We heard famous female chefs, authors, and entrepreneurs speak openly about glass ceilings and life in a kitchen world still run by men. We looked at what happens when food runs out, from feeding people in hiding from ICE in Minneapolis to why aid organisations sometimes have to deal with warlords. And soon, in Season 5, Joy of the Table, we celebrate the pleasure of eating.
Curious, sometimes uncomfortable, always hungry for more. Listen in.

Is schnitzel really Austrian? Who gets to decide what’s “authentic”? We asked an Austrian chef who admits he doesn’t even like schnitzel, and the Ukrainian chef who got borscht onto UNESCO’s World Heritage list. A Hawaiian writer showed us how food can carry the story of oppression, and we followed the taco all the way to Berlin. Every dish has a story, and it’s rarely the one you were told.

Nothing on your plate stayed in one place. We traced how migration built the way we eat: from the Great Migration in the US to the Turkish community that made the döner Berlin’s most famous dish. We tasted the glorious mash-up of Singapore, dug into Brazil’s roots, and landed in Sicily, where every culture that ever passed through left something in the pot.

Our biggest season yet, and our most outspoken. Famous female chefs, authors, and entrepreneurs told us what it’s really like to work in a kitchen world that is still run by men: the glass ceilings, the fights, the price they paid. And they told us what has to change.

What happens when food runs out? The most uncomfortable season we’ve made. We heard from a volunteer feeding people in hiding in Minneapolis, and from two of the world’s biggest aid organizations about why they sometimes have to make deals with warlords to get food through. Because food is also a weapon, and we didn’t look away.
